NAME: “Antico” Prosecco Superiore Brut Nature
CLASSIFICATION: DOCG (Denominazione di Origine Controllata e Garantita).
TYPE: sparkling wine with second fermentation in the bottle.
GRAPES/VARIETY: 100% Glera.
AREA OF PRODUCTION: company vineyards in Col Sandago, in the Municipality of Susegana (Treviso).
SOIL: calcareous clayey, with a sandstone structure, shallow.
YIELD: 135 q/ha max.
HARVEST: manual harvest of the grapes during the first half of September.
VINIFICATION: pressing and de-stemming of the grapes and cold maceration for 24 hours followed by a soft pressing, static decantation of the wort, fermentation at a controlled temperature (about 18 °C). Aging and stay on fine lees in steel for 3-4 months.
PRISE DE MOUSSE: the wine is bottled the following spring and re-fermented in the bottle for about 3 months as per the product specifications, after which the yeasts remain on the bottom.
APPEARANCE: straw yellow color, with fine and persistent foam, slight but apparent.
AROMA: the fresh and fruity notes typical of Prosecco are added to the characteristic nuances of “bread crust” given by the contact with yeast.
TASTE: fresh and velvety, dry and pleasantly bitter at the end, with a good structure and delicately mineral.
PAIRINGS: excellent sparkling wine for the whole meal and for fish dishes, it goes wonderfully with cold cuts and cured meat that are typical of the production area, such as “Sopressa”.
SERVING TEMPERATURE: cool shortly before use at 8-10 °C. Pour gently into a jug, separating the clear wine from the bottom.
